Ottoman cuisine is one of the most varied in the world. In its time, the Ottoman Empire encompassed many different ethnic groups that had their own ways of preparing and cooking meals. Over time, many of these became part of Ottoman cuisine.
In this workshop, we'll prepare a three-course Ottoman-style menu featuring dishes that traditional Turkish/Ottoman homes would have made. And, since no meal is complete without refreshing Turkish drinks and Turkish coffee, we'll have these, too!
Appetizers
Stuffed vine leaves with sour cherries (recipe from 1844)
Sailor's Roll - a rolled pastry with cheese and peas served with honey
Main Course
Stuffed quince - oven-baked quince stuffed with minced lamb, veal, rice, pine nuts and currants OR
Kavun Dolmasi - cored melon stuffed with mincemeat and baked with rice, herbs, almonds, currants and pistachio (recipe from the 1400s)
